This is a wonderful spice rub that the authentic flavor of food straight out of Bombay — chicken, rice, beans, curries, shrimp, you name it. It works well at high temperatures, so you can use it for either grilling or barbequing.You can make chicken kabobs using pieces of chicken in some of the rub and add a little salt and pepper and grill away. Serve the chicken with rice, naan or pita bread, and either a riata or chutneys. Tomato and Apple chutney go well.
