i know it sounds funny that I say this, but this oil, and the thought of what California is beginning to produce, really excites me. California has producing some exceptional olive oil the past 3 years or so because it is using a relatively new method of production where the trees can be irrigated and fertilized. (Traditionally grown orchards are not irrigated or fertilized, believe it or not) They can also be harvested much faster meaning the olives get to the mill before the oil can breakdown and develop acid. This is my favorite oil for dipping. It’s light and grassy in taste, as well as light and smooth in texture. It has It’s a very fresh taste adding a new dimension to California cuisine. It will hold it’s own with the best from Spain and Italy. A great oil for both dipping and cooking.
